Two-Potato Pancakes

<p>These make a great simple dinner with sausages (either meat or veggie-type) and applesauce. The addition of sweet potatoes makes the pancakes much higher in vitamin A and vitamin c, fiber, and complex carbohydrates, while the addition of white potatoes keeps the pancake from being too moist and soft. You can peel the potatoes if you prefer, but keeping the skins makes the dish even healthier.</p>

Ingredients
1 white potato, scrubbed and grated
1 sweet potato, scrubbed and grated
1 whole egg or 2 egg whites, slightly beaten
1/2 cup green onions or scallions, minced
1 tsp. Italian seasoning
1 tsp. mild oil (or nonstick spray) for fry pan

Step by Step Instructions
  1. Combine all ingredients and mix well. (Plan to fry them right away because grated white potatoes turn a strange pinky brown if left to sit.)
  2. Heat large nonstick skillet or seasoned cast iron pan for a minute over medium heat. (Add a bit of oil if you're not sure of the nonstickness...)
  3. Drop the potato mix by tablespoonfuls into the skillet and flatten them slightly. Cook about 5-6 minutes on each side.
