Baked Zucchini

<p>A yummy way of fixing zucchini (or other summer squash) that concentrates the flavor and keeps the squash from being watery. It works with an oven meal, or on the grill or campfire. Bonus: No pan to wash!</p>

Ingredients
4 medium zucchini (or other summer squash)
2 T. extra virgin olive oil
2 tsp. fresh lemon thyme, finely chopped
2 tsp. fresh oregano, finely chopped
1/4 cup Parmesan cheese, freshly grated

Step by Step Instructions
  1. Preheat oven to 350 degrees.
  2. Split zucchini in half and arrange cut side up on a large sheet of heavy-duty aluminum foil. Sprinkle with remaining ingredients.
  3. Fold foil into a packet. Crimp edges. Bake for 35 minutes, until zucchini is tender.
