For the filling, we used cooked greens of all different sorts as we have a habit of saving greens like the outer leaves of escarole, radish or beet tops, arugula, or turnip greens. Any and all of these are great combined with spinach or chard and wilted together in olive oil, garlic, and a pinch of hot pepper, then chopped up for the lasagne. <br /> Get ready for some flavor!</p> Vegetarian!

<ul> <li>2 T salad oil</li> <li>2 lbs. cubed goat meat</li> <li>1 tsp. salt</li> <li>1.2 tap. garlic powder</li> <li>1/4 tsp. oregano</li> <li>1/8 tsp. ground cumin</li> <li>1 large onion, chopped</li> <li>1 T flour</li> <li>1 10-oz. can Rotel tomatoes and green chiles</li> <li>1 10-oz can water</li> </ul> <p>Brown meat in hot oil. Add salt, garlic powder, oregano, cumin and onion. Cook until onion is soft. Sprinkle flour over all and allow to brown, stirring constantlly. Add tomatoes and water. Simmer uncovered for 40 minutes, stirring occasionally. Most of thliquid will be absorbed. Serves 6.</p>

Cooking changes the radishes completely, replacing their pungent flavor with a mild, turnip-like sweetness. Here are two versions: the one with chives goes well with chicken, pork, or fish. The version with cream turns a colorful bright pink. Sauteeing the radishes briefly in butter helps bring out their mellow, sweet flavor, and as a braising liquid, chicken broth was the first choice of the cooks at America&#8217;s Test Kitchen, but feel free to experiment with vegetarian options.</p>

<p>Bratwurst with Collards &amp; Rice</p> <p>2 cups uncooked long-grain brown rice<br /> 2 tablespoons extra-virgin olive oil<br /> 1 large yellow onion, thinly sliced (or 1 cup fresh onion bulbs, sliced a bit thicker)<br /> 1 package (around a pound) local, naturally raised bratwurst, cut into 1-inch pieces<br /> 1 large bunch collard greens, tough stems and ribs removed, leaves torn into large pieces<br /> salt and ground pepper<br /> 2 tablespoons cider vinegar</p> <p>Cook rice according to package instructions. Meanwhile, in a large skillet or heavy bottom pot, heat oil over medium-high. Add onion and cook until softened, 5 minutes. Add bratwurst &amp; 1 Tbsp vinegar and cook, stirring often, until browned, 6 to 8 minutes. Add collards, season with salt and pepper, and cook, stirring/turning constantly, until collards are just tender, 7 minutes. Stir in 2nd Tbsp vinegar and serve over rice. Broiled Flank Steak

<p>Broiled Flank Steak</p> <p>You will need:</p> <p>2 pounds flank steak<br /> 1/4 teaspoon pepper<br /> 1/4 teaspoon dry mustard<br /> 2 tablespoons soy sauce<br /> 6 tablespoons vegetable oil<br /> 2 tablespoons white vinegar or lemon juice<br /> 2 cloves crushed garlic<br /> 2 ounces Roquefort or other blue cheese, softened<br /> 2 tablespoons butter, softened<br /> 1-1/2 teaspoons chopped fresh chives</p> <p>Combine pepper, mustard, soy sauce, oil, vinegar and garlic in a jar with a tight fitting lid and shake well. Pour over steak, cover and allow to marinate overnight in the refrigerator. Remove steak from marinade and discard marinade. Broil or grill for 6 minutes on each side. Meanwhile, combine Roquefort, butter and chives. When meat is done, place on carving board and spread with butter. Slice very thin and serve immediately.</p> <p>Yield: 4 servings</p>
