Siloam Springs, AR:  Online Market is Open!

www.siloamsprings.locallygrown.net

The outdoor market had a great turnout today and beautiful weather! The mild temperatures have been beneficial to our farmers and the early sowing of their crops. Herbs, greens, root veggies, strawberries, squash and zuchinni, onions, beets, turnips and daikon were plentiful today. Local, Arkansas honey is always available. There were lots of fresh, cut flowers just in time for Mothers Day! Farm fresh eggs, pastured pork(bacon, chops, ham, work loin, sausage, brats), pastured chicken(whole birds and cuts), and grass fed beef(ground, brisket, steaks, roasts, snack sticks) are also available. Loaf breads, cakes, pizza crusts, cookies, flat breads, cinnamon rolls, scones and muffins are baked fresh. Jams and jellies are made with love. Knitted and crocheted items are hand made and ready to be worn or draped on a chair or bed. Hand made soaps, bath teas and more in fabulous scents and homemade laundry detergent, deodorant, lip balms, and first aid creams are crafted by local makers. Beautiful art is displayed by a beautiful local artist who paints plein air while visitors observe. All types of plants are available from succulents to hanging baskets to roses. Local musicians are invited to play their tunes and today Sam Thompson joined us from Fayetteville. If you haven’t been by to visit yet this season make time to do so on Tuesday(3-7 pm) or Saturday morning 8 am to 1 pm.

The online market continues year round and placing an order online ensures you get the items you want. During the outdoor market season you pick the order up at the Welcome Station between 9 am and noon.

Be sure to like our Facebook page to keep up with events and what seasonal produce and fruits are available. Check out a great recipe using market ingredients that will be posted tonight!

Saturday, May 14th is our first Kids Day of the season! Joining us with great, free activities for your kids will be the Siloam Springs Museum, Benton Co Master Gardeners and The Romper Room with the ever favorite bounce house! The Kids Day fun begins at 9 am.

Have a great week and see you at the market!

Farm to Table Recipes

Aztec Chicken Salad

Be it known far and wide that this recipe has been used to the point of abuse in the Horton household. It has served many groups, parties, and special occasions and has been replicated by many people in many places many times over the years. It’s one of two dishes Mama Roz won’t become famous for.

This recipe is very forgiving and can be adapted for conventional or organic consumption. Notes about substitutions are included

SALAD INGREDIENTS
2 boneless chicken breasts, baked, cubed and cooled
*Dark meat or canned chicken may be substituted
*Mama Roz likes to bake the chicken with cumin
1 head of iceberg lettuce, shredded or torn.
*Substitute one bag of lettuce or two heads of Romaine lettuce
3-4 Roma tomatoes chopped
*Other type tomatoes will work if Roma is not available
1 bundle scallions chopped
*a small onion finely diced may also be used.
1 can black beans, drained and rinsed
1 can whole kernel corn, drained

DRESSING
1 bottle Catalina dressing mixed with Louisiana Hot Sauce. Mix the ratio to suit your individual taste

Lightly toss salad ingredients with the dressing. Serve immediately with corn chips.
Peppers are optional
A light sprinkling of cheese is optional
