Dear Green Fork Farmers Market Customers:

NEW this week: Green Fork Farm has fresh fennel available.

Also available this week:

Vegetables— Arugula, spinach, swiss chard, kale, beet greens, gourmet salad mix, green onions, lettuce, pac choi, and radishes.

Herbs—Cilantro, sage, fennel, and mixed herb bunches.

Eggs—Pastured, free range chicken and duck eggs.

Meat—Pastured beef, chicken, goat and lamb.

Baked goods—Flourless almond torte.

Fermented foods—Sauerkraut, okra, and jalapenos.

Salsa—Made with locally grown and organic ingredients.

Olives and Olive Oil—organic and directly from the grower in California.

Place your order from now until Tuesday at noon for pickup on Wednesday from 4-7 pm at Nightbird Books in Fayetteville.

If you aren’t able to place an order, stop by to shop with us on Wednesday. We will have a variety of items for sale from the table.

Berea Gardens:  Availability for May 4


Hi Friends,

Won’t be long until the broccoli comes, green beans, beets, carrots and sweet corn are out of the ground and growing, squash, cucumbers and tomatoes are transplanted, and peeprs and eggplant are going in this week, but for now it’s pretty much the same fare as last week.

Recipes

Rhubarb-Strawberry Pudding Cake
(adapted from Gourmet, April 2007)

¼ cup water
1 ½ teaspoons cornstarch
1/3 and ½ cups sugar
3 cups chopped fruit (I prefer 2 cups chopped rhubarb, 1 cup strawberries, – or all strawberries –
any variation you choose)
1 cup all purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 large egg
½ cup milk
1 stick butter melted and slightly cooled
1 teaspoon vanilla

Preheat oven to 400 degrees and put oven rack in the middle position. Butter an 8×8 ceramic or glass baking pan. Stir together the water, cornstarch, and 1/3 cup sugar in a saucepan and heat. Stir in the rhubarb, if you are using it, but not the strawberries. Simmer, stirring occasionally, for about three minutes. Remove from heat and add the strawberries.

Whisk together the dry ingredients: flour, baking powder, salt, and the remaining ½ cup sugar. In a separate bowl, whisk together the wet ingredients: egg, milk, butter, vanilla.

Now add the dry ingredients to the wet, and stir in until well combined. Do not overbeat.

Coat the bottom of the baking pan with ½ of the fruit mixture. Spread the batter over that, then dollop the remaining fruit mixture on the top. Bake for 25-30 minutes. Test for doneness with a toothpick. If it comes out clean, it’s done!

Allow to cool on a rack for at least 5 minutes before serving. This can be served warm or served later at room temperature. Wrap and refrigerate leftovers, if there are any.

Makes 8-10 servings.

Hello!

We’ve got a great selection of spring greens for you this week and also STRAWBERRIES! Our organically grown strawberries are here for sure, and now is the time to enjoy them to the fullest! Dozen Bakery has their delicious Brown Sugar Shortcakes listed so make sure you get some to have for dessert (make for a yummy breakfast, too!)

We also have plants this week! A selection of tomato and basil varieties is available. All of these plants are grown organically, starting with non GMO seed and organic potting mix. They are sure to be a great addition to your garden!

Just a reminder that you can find the strawberries under the “Fruits” section of the Market page, and the tomato and basil starts under the “Herb, Vegetable, and Flower Plants” page.

We will be returning to our regular weekly schedule from here on through the season. We look forward to seeing your smiling faces every week!

Good afternoon.

Today is the first day of May! Can you believe that the year is flying by so quickly? My boys only have a few weeks of school left before this school term ends. I am always glad when our schedule slows down. We will have a few weeks off from soccer practice! That means we will have more time as a family to sit down together for dinner. Summer is an excellent time of year for our family to kick the habit of eating out and also for clearing our diets of processed foods.

This website is full of practical tips for cleaning up your diet and informative hints for cutting down on refined sugars and flours. I’ll be trying some of her recipes soon.

Mother’s Day is next Sunday, May 8 and there are lots of wonderful gift ideas at Conway Locally Grown if you want to take a look around! Here are some ideas:

Flowers – Instead of the average bouquet, how about: edible flowers, a flowering plant, a vegetable plant, an herb plant, an apple tree or a lilac bush!
Sweets – To tell her how sweet she is to you, there is honey, jams and jellies, candy and yummy strawberries!
Breakfast in Bed – We have a variety of breads (biscuits, braids, loaves, rolls, etc.), bacon and eggs.
Pamper – To pamper her, there are many lotions, soaps, bath fizzies and essential oils listed.
Fun gift ideas – There are a variety of canned goods to choose from! What about crocheted dish cloths, wash cloths or soap sacks? Embroidered dish towels? A quilt? We even have peacock feathers!
Gift certificates – We have 25.00 and 50.00 gift certificates available.
