Zesty Quinoa Salad

Serves: 4-6 as a side dish, or many as an appetizer
Vegan!

Ingredients
1 cup Quinoa, uncooked
2 cups water
1/4 cup olive oil
2 ea limes, juiced
2 tsp cumin, ground
1/2 tsp red pepper flakes
1-1/2 cup cherry tomatoes
15 ounces black beans, drained
1/4 cup cilantro, chopped
salt to taste
pepper to taste

Step by Step Instructions
  1. Rinse Quinoa well. Bring quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 10-15 minutes. Allow to cool.
  2. Whisk olive oil, lime juice, cumin, and red pepper flakes together in a bowl.
  3. Combine quinoa, tomatoes, black beans, and green onions together in a bowl. Pour dressing over quinoa mixture; toss to coat. Stir in cilantro; season with salt pepper.
  4. Serve immediately or chill in refrigerator.
  5. Optional Additions: Diced Avocado, Grilled Corn, or Shredded Chicken
