Bok Choy Toss with Orange Ginger Vinaigrette

Ingredients
1 head Bok Choy
3 medium sized Tomatoes (seeded & chopped)
1 Summer squash (quartered & sliced)
2 tablespoons Toasted sesame seeds
1/4 cup Orange ginger vinaigrette
For the Orange ginger vinaigrette:
1/4 cup Orange juice
4 1/2 teaspoons Olive oil
1 tablespoon White wine vinegar
1 tablespoon Honey
1/2 teaspoon Dijon mustard
1/4 teaspoon Ground ginger
1/4 teaspoon Orange peel (grated)
1/8 teaspoon Salt

Step by Step Instructions
  1. Combine the bok choy, tomatoes and squash in a bowl. Drizzle the vegetables with the vinaigrette and toss to coat.
  2. Sprinkle the salad with sesame seeds and serve.
  3. For the Orange ginger vinaigrette: Put the orange juice, oil, vinegar, honey, mustard, ginger, orange peel, and salt into a jar, stir to combine, seal the jar lid tightly and shake well.
