Sicilian Steamed Leeks

Vegetarian!

Ingredients
6 medium sized Leeks (white portion only) (halved lengthwise, cleaned)
1 large Tomato (chopped)
1 small Navel orange (peeled, sectioned and chopped)
2 tablespoons Fresh parsley (minced)
2 tablespoons Greek olives (sliced)
1 teaspoon Capers (drained)
1 teaspoon Red wine vinegar
1 teaspoon Olive oil
1/2 teaspoon Grated orange zest
1/2 teaspoon Pepper
Crumbled feta cheese

Step by Step Instructions
  1. Put a steamer basket into a Dutch oven over 1 inch of water. Put the leeks into a basket and bring the water to a boil.
  2. Reduce the heat to a low boil, cover, then steam for 8 to 10 minutes.
  3. While the leeks steam, stir the tomato, navel orange, parsley, olives, capers, vinegar, olive oil, orange zest, and pepper together.
  4. Put the leeks onto a platter, spoon the tomato mixture over them, and sprinkle them with the crumbled feta cheese.
