Mashed Potatoes with Leeks

Ingredients
2 1/2 pounds Yukon gold potatoes
Kosher salt
1 cup Salted butter (cut into pieces, at room temperature)
2 Leeks (white and light green parts, thinly sliced and rinsed)
1 teaspoon Chopped fresh thyme
1 teaspoon Chopped fresh rosemary
1/2 to 3/4 cup Milk
Salt & pepper to taste

Step by Step Instructions
  1. Put the potatoes into a saucepan and cover with cold water. Season the water with salt and bring to a boil. Reduce the heat to a simmer and cook for 15 minutes.
  2. Melt 4 tablespoons of butter in a skillet and add the leeks, thyme and rosemary. Cook stirring for 12 to 15 minutes. Season to taste, then set aside.
  3. Drain the potatoes and return the pot to low heat. Let cook for 2 minutes to evaporate the water. Add 1½ sticks butter to the pot (reserve 1 tablespoon), and mash the potatoes. Gradually mash in the milk and salt (start with 1/2 cup milk and add more if needed).
  4. Season with salt & pepper to taste and stir in the leek mixture. Serve topped with the remaining butter.
