Apple-Jalapeno Stuffed Poblano Peppers

This is an interesting variation of stuffed poblanos. The spicy jalapeno and sweet apple combine for a delicious combination. Try variations with ground pork or lamb.

Ingredients
4 poblano peppers
2 diced jalapeno peppers
1 cored and diced apple
1/4 cup Parmesan or goat cheese, shredded
4 oz. Italian sausage, cooked and crumbled
1 Tbs Cayenne or hot chile seasonings
1/2 tsp. cumin

Step by Step Instructions
  1. Cut tops off poblanos and remove seeds. Combine apple, jalapenos, cheese, sausage and seasonings in a bowl, mix well. Stuff poblanos with mixture and place on a lightly oiled baking sheet. Bake 25-30 minutes @ 350 degrees. Enjoy!!!!
