Parsnip Puree

Vegetarian!

Ingredients
1 pound Parsnips (peeled & chopped)
1/2 cup Milk
2 Bay leaves
3 cloves Garlic (peeled)
1/2 cup Heavy cream
2 tablespoons Unsalted butter
1/4 teaspoon Salt and pepper each

Step by Step Instructions
  1. Put the parsnips into a pot of water and bring the water to a boil. Reduce the heat slightly and let the mixture gently boil for 12 minutes.
  2. Meanwhile, put the milk, bay leaves, and garlic into a saucepan and gently simmer them for a few minutes. Remove and discard the garlic & bay leaves, then put the milk, parsnips, heavy cream salt, and pepper into a blender.
  3. Blend the mixture until it reaches a consistency of whipped cream. If the mixture is too thick, mix in a bit more milk. Serve the puree warm.
